Buy a remote meat thermometer, we will be happy to show you one. It is critical to your success! Let your roast rest at room temperature for 1 hour before cooking. Preheat your oven to 325°. Insert the thermometer probe into the side of the roast, as close to the center as possible. Set your thermometer to:

130° – Rare

140° – Medium Rare 

145° – Medium 

150° – Medium Well (not recommended)

Place in your roasting pan, bones down (a rack is not necessary), and put in your oven uncovered. Approximate cooking time will be 20-25 minutes per pound (THESE ARE APPROXIMATES). Your roast will be done when the thermometer reaches your desired internal temperature. When done, remove from oven and allow to rest in roasting pan for 30 minutes. Cut strings and discard fat cap. Slice and ENJOY!
